Miss Mary's Mac

Granny's mac has been a labor of love! Out of all my years of eating other folks mac, for me granny's always reigned supreme. To be clear it has been mostly because a lot of folks put velveeta in their mac and that makes me gag.. Then there are those that add egg.. Hated it! I don't like my mac custard like! In the black community mac is almost like a right of passage! Once you get it right you become the family mac maker.. tell me I'm fuckin lyin!? Another thing I've learned is that when a family makes their mac a certain way they talk down about other macs that aren't like theirs.. I say get over it and expand ya damn pallet!! So over the years of me tryna get my mac together it just wouldn't ever be quite like what I remembered.. Also mac n cheese was something else I hated as a child! Don't take my card, I finally got my life together!! LOL... Okay so Mary's Mac... Granny always had her way in the kitchen. Like me, she liked to do it all herself so I'd basically just be in the way wanting to eat the cheese she cut. The biggest thing I've always remembered is that there were never any pre shredded cheeses or anything like that... I was told part of the love was the labor... y'all listenin?? Once the cheese was cut granny would heat up the cast iron and melt down some unsalted butter. Next, she'd add about a tablespoon of flour.. once them shits married together, (I believe the fancy call it bechamel) she'd add milk and let them thicken. In went all that cheese she loved up! To be clear, granny didn't grate she cut into little squares, which I still do.. Anyways, once all the cheese was melted into a nice sexy ass velvety sauce she'd pour it over some elbows that she had salt, peppered, and paprika'd. Oh and some dry mustard! Never no extra cheese on top.. just a dusting of paprika. That was it in a nut shell and it was always fuckin fire.. Ya heard! ALWAYS!

Now lets get into Mary's Mac wit DaSixFoota's stank!!! So I do all that other stuff of course but I use 3 different cheeses and heavy whipping cream.. And this was all granny approved! Only thing she never approved of was my greens and I'll tell that story soon!! So as far as when I make it.. I use gouda, gruyere, and Vermont sharp... and I have a secret weapon, y'all ready??? White truffle oil! Thank me fuckin later!
