Lamb chops currently have the community in a chokehold! I've really been curious about how certain foods even go viral! Especially stuff like lamb. When I was growing up I remember my friends mostly being disgusted by the fact that I ate lamb! Nowadays folks cookin up lamb and lovin it and I ain't mad.. Getting to see all my fellow lovers of food comin up with all kinds of creative ways to eat lamb gets me excited, it is def one of my fuckin favorites!!! I've had non lamb eaters eat lamb.. that's how good my shit be! There was one time though I completely burned up some lamb ribs on the grill! Man I just went to check on the other food, was gone under 3 minutes came back and the grill was on fire and the siding was melting off the house! Wasn't funny then but I giggle now! I was so excited about them, but lamb greasy ass be tricky on that grill sometimes... Anyways, my daught came home with these Lamb Rib Chops and I had a flashback of the inferno!!! LOL.. My ass really started to try again and grill them but inspiration was stronger than my need to conquer them on the grill.. I've got plenty of time for that! So on this day I decided on the honey sriracha method.. I do it with salmon and it's always a hit so I decided to give it a try with these beautiful hunks of meat.. now when I do this it's never exact or even the same every time because I really feel like I'm still perfecting. First thing I did was marinate them in lime juice, olive oil, and mint.. Let them bathe in that for about an hour outside the fridge.. I don't know if you know this but room temp meat cooks way better... next I season them thangs wit erthang but the kitchen sink plus cumin, must add cumin.. then I browned them in a screaming hot ass pan and finish in the oven... while that's in the oven getttin all tender and delish I start mixing up my sauce. Now I've done this a few different times and it comes out different damn near every time but it's always good! I gotta start measuring and balancing and shit so I can give y'all proper recipes.. soon come! This particular time I did it like so... in a saucepan I added little water, some butter, sriracha, honey, red wine vinegar, and soy sauce.. I used water rather than broth because of the salt. If you'd prefer broth that's ya bidness! Once that's all bubblin and such, pour it over the lamb and give it a few more minutes to get all glazy!! So there it is.. The result was the photo below and to be quite honest, I took a bow!!! Let me know in the comments if you decided to try!!!
